An exciting opportunity has arisen for a talented Sous Chef to join the kitchen brigade at a prestigious country estate hotel and spa. Working within a 1 AA Rosette restaurant alongside multiple dining outlets, the successful candidate will play a key role in delivering exceptional seasonal cuisine for restaurant service, weddings, conferences, and large-scale events.
This position is ideal for an experienced Junior Sous Chef or strong Senior Chef de Partie ready to take the next step. The Sous Chef will support the Head Chef in maintaining the highest culinary standards, ensuring smooth day-to-day kitchen operations, and helping to develop a motivated, high-performing team.
Salary: £38,000 per annum
Location: Rural setting — valid driving licence preferred
Eligibility: Applicants must have the right to work in the UK
Role Responsibilities
The Sous Chef will support the Head Chef in delivering outstanding food across all hotel dining operations. Key duties include:
Preparing, cooking, and presenting high-quality dishes to AA Rosette standards
Assisting with menu development, recipe creation, and seasonal dish innovation
Preparing meat, fish, and fresh ingredients to a high professional standard
Supporting food safety, hygiene, and health & safety compliance
Monitoring portion control and minimising waste
Maintaining excellent kitchen organisation and cleanliness
Assisting with stock control and ensuring the kitchen is well supplied
Training, mentoring, and developing junior team members
Taking responsibility for the kitchen in the absence of senior chefs
Candidate Profile
Essential
Genuine passion for food and hospitality
Strong people management and leadership skills
Proactive approach with the ability to prevent issues before they arise
Consistency, reliability, and a professional work ethic
Ability to remain calm and effective under pressure
Computer literate with confidence using kitchen systems and basic administration
NVQ Level 2 in Professional Cookery (or equivalent)
Previous experience as Junior Sous Chef or Senior Chef de Partie
Excellent teamwork and communication skills
Desirable
Experience in a four-star hotel environment
Background in a large AA-rated property
Experience working across high-volume banqueting and events
