Join our bustling 4-star hotel nestled in the scenic Scottish Borders, just outside Peebles. Our property boasts 100 guest rooms, a busy leisure club and spa, and a renowned golf course. With multiple dining options, including breakfast, afternoon tea, and dinner across our main restaurant, three bars, and spacious function rooms accommodating up to 250 guests, no two days are ever the same!
About the Role
As Junior Sous Chef, you’ll work closely with our newly appointed Head Chef and senior kitchen team to shape our evolving food concepts. This role provides an exciting opportunity to step into a leadership position within a professional culinary setting. You’ll play a key role in ensuring high-quality, memorable dining experiences for our guests by overseeing food preparation, managing kitchen operations, and guiding junior team members.
Key Responsibilities:
- Oversee daily operations of assigned sections, maintaining high standards in food prep and presentation
- Support the Head Chef in menu planning, food production, and maintaining kitchen health and safety standards
- Train and mentor junior kitchen staff, fostering a positive and productive work environment
- Maintain impeccable food hygiene practices and stock control
- Manage inventory, ensure proper food storage, and oversee waste management
- Collaborate with the kitchen team to consistently deliver excellent guest experiences
- Assist with cleaning schedules, maintenance, and daily record-keeping to keep the kitchen running smoothly
What We’re Looking For:
- Previous experience in a similar Junior Sous or Chef de Partie role within a 4-star or comparable environment
- Strong organizational and leadership skills, with attention to detail
- Deep understanding of cooking techniques and culinary best practices
- Ability to communicate effectively with colleagues at all levels and thrive in a fast-paced kitchen
- Commitment to high standards of cleanliness, quality, and guest satisfaction
